Q: What is the difference between grass fed beef and corn fed beef? 

A: Grass fed beef is very lean, and can be bland in flavor. Corn fed will be very fatty and poor quality. A proper mixture of both high moisture corn and grass creates the best beef. It's the same as having a well balanced diet for people.

Q: What is the difference in results of beef if it is fed dried corn or grass compared to high moisture corn and grass?

A: Dried feed is lacking in nutrients but does create roughage in the digestive track and helps break down other food. High moisture feed is high in nutrients, primarily protein and creates great quality meat. This is the same as Q1 as a balanced diet is ideal for best results.

Q: What wrapping process does FCS do when packaging orders?

A: Double wrapped in cellophane and then wrapped in heavy freezer paper

Q: Why is the wrapping process important?

A: To prevent freezer burn and keep the meat fresh.

Q: What breed are the cows?

A:We buy Angus, Limousine cross, and Hereford cross for orders of FCS grown beef.

Q: How do I know when my order is ready for pickup?

A: We will call you on the number provided at the time the order was confirmed. IMPORTANT: We need the order picked up within 2 days of completion due to freezer storage space.

What does the term "Yield" mean in the meat processing industry?

Yield grading provides an estimate of the percentage of boneless, closely trimmed retail cuts. The expected yield of retail cuts from the field dressed animals ranges from approximately 55% to 75% of the hanging weight, depending health and build of the animal, and the type of cuts produced.

Q: How long is beef aged before cutting and packaging?

A: We age our beef a minimum of 14 days before cutting and packaging.

Q: How do you get consistent results with your smoked meats?

A: We use a Enviropak industrial sized smoker that is programable and can fit a full cart of various meats

Q: What is the best beef Prime, Choice, or Select?

A: Beef is graded in two ways: quality grades for tenderness, juiciness and flavor; and yield grades for the amount of usable lean meat.

Select = Good

Choice = Better

Prime = Best
